Mexican cuisine can be traced back nine thousand years when Mayan’s harvested Maize and corn. The Mexican side of the Aztec Empire created a multi-ethnic society where many different foodways became infused. The staple native foods are corn, beans, squash, amaranth, chia, avocado’s, tomatoes, tomatillos, cacao, vanilla, agave, turkey, spirulina, sweet potato, cactus and chilli pepper.
